Main courses: From Schnitzel to Spätzle

The Wiener Schnitzel, national meal of Austria.

Kaspressknödel - fried cheese dumplings
4 people

500 g bread, dried and chopped
1 big onion, chopped
salt, pepper
parsley
some warm milk
2 eggs
300 g cheese (the stinkier, the better), chopped

Mix all ingredients, form flat, little loafs and fry them in oil. Serve in soup or with Sauerkraut.

Beuschl
4 people

This dish might sound quite nasty, but at least it is very distinctively Austrian.

700 g Beuschl (loung, trachea and other vessels from pig or calf)
2 carrots
1 parsley with leafs
1 onion
2 leafs of bay leaf
some juniper berries
some white wine (sour)
vinegar
some celery
sour cream

Begamel sauce from:
125 g butter
100 g flour
1/4 L cold water
(to make begamel: roast flour in butter until golden-brown and gradually add cold water while stirring to make a thick sauce)

Wash the Beuschl and boil it with salt, pepper, carrots, parsley, onion, celery, juniper berry and bayleaf for about 1 1/2 hours in about 2 L water. Remove the bayleaf and juniper berries and chop the Beuschl in tiny little stripes, which should help to make it look much nicer. Mix the soup and gradually add the Begamel sauce. Add the Beuschl stripes, carefully add some vinegar and wine, plus sour cream until it becomes creamy-saucy. Boil briefly again, and serve with bread dumplings

Käsespätzle
3 people

400 g flour
1 egg
1/4 water
1 tablespoon butter
some baking powder
salt
1 onion, chopped
some butter
250 g cheese (the stinkier, the better), chopped

Make a dough and boil droplets from it in salted water. They are done, when they swim on the surface. Roast the onion in butter golden, add the Spaetzle (the droplets) and the cheese, stir carefully until the cheese is melted. Serve with chives.

Wiener Schnitzel
per person

Schnitzel (steak, thick slices of meat), pork or calf beef
flour
1 egg, beaten
breadcrumbs
3-4 potatoes per person
parsley, chopped
butter
lemon and cranberry sauce

Punch the meat to make it tender - in Austria hammers are used for that, which is great fun. Then put them in flour, egg and bread crumbs and fry them golden-brown. Boil the potatoes and mix them with butter and parsley in order to cover them with some butter-parsley stuff. Serve the Schnitzel with the potatoes, a slice of lemon and some cranberry sauce (not too much, about the amount a big seagull shits).

Wiener Schnitzel is originated in Byzanz, where people liked to show off with their prosperity by putting gold on their meals. In Venezia this habit was copied, but prohibited by the church. As an alternative, meat was fried golden-brown and became part of "Piccata milanese". This dish was introduced to Austrians, when Venezia became part of the Austrian Empire and turned into the ancestor of the Wiener Schnitzel.

Fleischkknödel - Meat dumplings
Per person

150 g minced meat
salt, pepper
1 slice of dried bread (white)
1 egg
a pitch of thyme
1 tablespoon of onion and parsley, chopped and roasted in butter
1 clove of garlic
soup (either as described above or from stock)

Mix all ingredients except soup to a doe and form little dumplings. Boil them in saltwater for about 15 minutes and serve them in the soup or - as an alternative - with Sauerkraut.

Pinzgauer Specktorte - Pinzgau bacon pie
4 people

250 g quark or curd cheese
200 g butter
250 g flour
200 g bacon, chopped
200 g spring onion, chopped
200 g onion, chopped
salt, pepper
thyme, nutmeg, parsley and chives
125 mL sour cream
2 eggs
50 g cheese, grated

Mix quark, butter and flour to a doe, season with salt and let it rest for some 30 mins in the fridge. Roast bacon, spring onion and onion in some butter and add the seasoning. Cover a baking casserole with the doe and put the roasted mix on it as for a quiche. Blend the sour cream and eggs and pour this over the pie. Then cover it with the grated cheese and bake for 35 to 40 minutes at 160 degrees Celsius. Serve with salad.

Rindsrouladen
4 people

4 large beefsteaks
mustard
salt, pepper
1 onion
50 g bacon
4 pickles
1 carrot
some butter
1 teaspoon flour

Chop the bacon, onion, pickles and carrot into strips and roast them briefly in butter. In the meantime, beat the meat tender and season with salt, pepper and mustard. Put the roasted filling on the steaks and roll them up. Fix with a toothpick or string and roast them briefly in the pan. Fill the pan up with water and add some seasoning if wanted (stock). Boil for another hour at 200 degrees Celsius and thicken the sauce with the flour. Serve with dumplings or mashed potatoes.

Bierfleisch - Beer casserole
4 people

750 g beef
15 g bacon, chopped
15 g carrots, chopped
15 g celery, chopped
15 g dark bread, chopped
250 mL dark beer
1 teaspoon of tomato concentrate
1 shot of balsamic vinegar
seasoning: salt, pepper, thyme, coriander, caraway, mustard
1 L soup (as above or from stock)

Cut the beef into pieces and roast briefly. Add the tomato concentrate and vinegar, beer and soup. Add all other ingredients and boil until the beef is done. Thicken a little with flour or starch.
